Protein is kind of a buzz word lately, and that’s a good thing! Protein is the building blocks for our bodies. It is essential for building and repairing body tissues such as muscles, bones, hair and skin. As we age, our bodies stop regenerating like they used to, so it is important to add protein, particularly with collagen to our diets to help keep our muscles, bones, hair and skin strong. Protein helps us heal and provides energy.
Black Bean Salsa
Ingredients
- 1 can Black beans rinsed
- 1 can Whole kernel corn drained
- 1 Small onion finely diced
- 2 Tomatoes diced
- 1/2 cup Jalapenos chopped
- 1/4 cup Cilantro chopped
Dressing
- 1/4 cup Lime juice
- 2 Tbsp Olive oil
- 2 Tbsp White vinegar
- 1/2 tsp Cumin
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- Dash Cayenne pepper optional
Instructions
- In a colander, rinse and drain black beans and corn then place in a medium bowl.
- Add prepared onions, tomatoes, jalapenos and cilantro to the bowl and stir.
- In a small liquid measuring cup combine dressing ingredients and pour over vegetables. Stir.
- Store in the refrigerator until ready to serve.
