Meatloaf

This recipe is my version of “Meatloaf Extraordinaire” by Jean Pare, Company’s Coming Easy Entertaining. The first time I made it for my husband he had four helpings! It is very good. Sure to become a family favourite!

Serve 8.

INGREDIENTS:

Sauce:

7 ½ oz or 213 mL can        Tomato sauce

1/3 cup                                  Brown sugar, packed

1/3 cup                                  White vinegar

1 tsp                                       Prepared mustard

1 tsp                                       Dry basil

Loaf:

1                                              Egg, large

1 cup                                      Onion, finely chopped

1 tsp                                       Salt

½ tsp                                      Pepper

2 tsp                                       Beef bouillon powder

1 tsp                                       Worcestershire sauce

½ cup                                     Fine dry bread crumbs

2 lbs                                       Lean ground beef

DIRECTIONS:

Combine ingredients for sauce in a 2-cup measure. Stir and set aside.

Beat egg in large mixing bowl. Add next six ingredients plus ½ of sauce and stir.

Add ground beef, breaking it up as you add it. Using your hands, mix well until all ingredients are evenly combined.

Pack firmly into large loaf pan, keeping the middle of the loaf higher than the sides.

Bake at 350°F for 1 hour. Remove from oven and drain off fat. Pour remaining ½ of sauce over top and continue baking for ½ hour.

Let meatloaf rest for 10 minutes before cutting and serving.

    Okay that is next to cook just roasted a chicken last night so left of chicken something tonight.. But meatloaf is next ..maybe some baked potatoes with it…. Thanks for the post.
