Equipment

  • heavy saucepan

Ingredients

  • 4 Italian sausages
  • Olive oil
  • 1 Onion diced
  • 1 Garlic clove minced
  • 1 cup Mushrooms quartered
  • 1 Red bell pepper cut into large pieces
  • 3 cups Your favourite seasoned tomato sauce
  • ½ cup Water
  • Dash Cayenne pepper optional
  • 2 cups Dry penne

Instructions

Sauce

  • Heat oil in heavy pot. I use my cast iron pot for this recipe.
  • Add sausages and cook while preparing vegetables.
  • Remove sausages and drain off excess fat.
  • Add vegetables to pot and allow to soften.
  • Slice sausages on an angle, then add back to the pot.
  • Add tomato sauce, water and additional seasoning, if desired.
  • Reduce heat and allow to simmer while pasta is cooking.

Pasta

  • Bring about 6 cups of water with 1 tsp of salt to a boil in large pot.
  • Add dry penne and stir for a minute so it doesn’t stick to the bottom.
  • Reduce heat to medium and continue boiling until just tender.
  • Drain pasta and stir into sauce.
  • Serve with a sprinkle of parmesan cheese and a salad on the side.
