Tomatoes – Storing

We have a steady supply of fresh tomatoes for a few weeks at the end of each summer, usually more than we can eat, so I freeze them as they ripen to use throughout the year.

Freezing tomatoes is an easy way to preserve them. Lay them flat in the freezer so they come apart easier as needed. Julia Stewart photo.

How to freeze tomatoes

  • Wash, core and cut tomatoes into large pieces.
  • Put them in a freezer bag.
  • Remove the extra air with a straw. When you seal the bag, put a straw in the corner, close the zipper around the straw, suck the air out and quickly pull the straw out as you seal the last bit of the zipper.
  • Mark the bag with the date.
  • Lay them flat to freeze.  

How to use frozen tomatoes

I use the tomatoes throughout the year in soups, stews, sauces and salsa. Cherry tomatoes are nice to add to pasta.

If you don’t want the skin on the tomatoes, let them thaw before using and the peel comes off easily.

I especially like to use frozen tomatoes for salsa because the juice comes out of the tomatoes as they thaw. So the cooking time is reduced resulting in a fresh salsa taste.
