Bean Salad

A colourful and tasty addition to any salad bar. Make a few days ahead to allow it time to marinate.

Ingredients

  • 1 cup Granulated sugar
  • ½ tsp Dry mustard
  • ½ tsp Salt
  • ½ tsp Pepper
  • 1 cup White vinegar
  • 2 tbsp Vegetable oil
  • 1 can Cut green beans
  • 1 can Cut yellow beans
  • 1 can Kidney beans
  • 1 can Chickpeas
  • 1 cup Onion diced
  • 1 cup Celery chopped
  • 1 Red bell pepper diced

Instructions

  • Combine sugar, dry mustard, salt and pepper in a small bowl.
  • Add vinegar and oil. Stir and let sit a few minutes to dissolve sugar.
  • Meanwhile, drain and rinse green beans, yellow beans, kidney beans and chickpeas. Place in a large bowl.
  • Add prepared onion, celery and red pepper. Stir to combine.
  • Pour dressing over salad. Cover and refrigerate.
  • Let stand at least 24 hours before serving.
  • Will keep for a few weeks.
  • Serve with a slotted spoon.
