Apple Betty

This is my version of a recipe I discovered many years ago in Treats to Remember, a cookbook put together by the UBC Bakeshop. It is one of my favourite apple desserts and is quick and easy to make.

Similar to an apple crisp, this is a wonderful combination of soft, cooked apples and crunchy brown sugar and cinnamon topping.

Serve warm with ice cream or a slice of cheddar cheese.

Apple Betty

While this is baking, the home is filled with the aroma of apple, brown sugar, and cinnamon, bringing a smile to the faces of all who enter.

Equipment

  • 1 1.5 L casserole
  • 1 electric hand mixer

Ingredients

  • 6-7 Apples peeled, cored, and sliced
  • Cinnamon sprinkle
  • 1/3 cup Butter softened
  • ¾ cup Brown sugar packed
  • 1 cup All-purpose flour
  • ¼ tsp Salt
  • ½ tsp Cinnamon

Instructions

  • Preheat oven to 350°F.
  • Place prepared apples in a small 1.5 L casserole. It should be about 2/3 full.
  • Sprinkle with cinnamon.
  • In a small mixing bowl, cream butter and brown sugar together.
  • Add flour, salt, and cinnamon and mix to a crumbly mixture and sprinkle evenly over apples.
  • Bake for 40-50 minutes, or until apples are soft.
  • Serve warm with ice cream or a slice of cheddar cheese.
