Banana Bread Perfected

Compared to other quick breads, I find banana bread kind of boring. But… add a little molasses and it’s a different story. This moist, flavourful bread is a great way to use the overripe bananas on your counter. Add it to your brown bag lunches.

Compared to other quick breads, I find banana bread kind of boring. But… add a little molasses and it’s a different story. This moist, flavourful bread is a great way to use the overripe bananas on your counter.

Equipment

  • 1 Loaf pan
  • 1 Electric mixer

Ingredients

  • 2 ½ cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • ½ cup Butter softened
  • 1 ¼ cup Sugar
  • 2 Eggs
  • ½ cup Buttermilk* see step three in directions
  • 2 tbsp Molasses
  • 1 ½ cups Bananas 4 bananas ripened and mashed
  • 1 cup Chopped nuts optional

Instructions

  • Place oven rack in its lowest position and preheat oven to 350°F.
  • Grease the bottom of the loaf pans.
  • *Prepare buttermilk if you do not have any on hand. Put ½ tsp of vinegar or lemon juice in a 1-cup measure and add milk to the ½ cup mark. Stir and let sit until needed.
  • Combine dry ingredients and set aside.
  • In a large mixing bowl, cream butter. Add sugar and beat until creamy.
  • Mix in eggs.
  • Add buttermilk, molasses and bananas and beat until smooth.
  • Stir in dry ingredients until just moistened.
  • Add nuts and stir.
  • Pour equal amounts of batter into the two loaf pans.
  • Bake for 55-60 minutes at 350°F or until a toothpick inserted in the center of the loaves comes out clean.
  • Cool on a wire rack for 15 minutes.
  • Run a butter knife along the inside edge of each pan to loosen the sides of each loaf. Turn them upside to remove from the pans. Turn out slowly to allow the bottom to release from the pan.
  • Place top side up on the wire rack and cool completely before slicing.
  • Store in an airtight container at room temperature for up to four days or refrigerate for up to 10 days.
