Banana Chip Muffins

Banana Chip Muffins hot out of the oven.

The perfect combo of banana and chocolate, these banana chip muffins never last long. And they’re a good way to use your overripe bananas.

Makes 12 muffins.

INGREDIENTS:

1 ¾ cup                      All-purpose flour

½ cup                         Granulated sugar

1 tbsp                        Baking powder

½ tsp                          Salt

½ cup                         Semi-sweet chocolate chips

1                                  Egg

¼ cup                         Cooking oil

¼ cup                         Milk

½ tsp                          Vanilla

1 cup                          Mashed bananas (3 medium)

DIRECTIONS:

  • Preheat oven to 400°F.
  • Grease cups of muffin pan or line cups with paper liners.
  • Measure first five ingredients into a large bowl. Mix thoroughly and make a well in the center.
  • Beat egg in a small bowl until frothy.
  • Stir in oil, milk, vanilla and mashed bananas.
  • Pour into well of dry ingredients.
  • Stir only to moisten. Batter will be lumpy.
  • Fill muffin cups ¾ full.
  • Bake for 20-25 minutes.
