(Mom’s) Beef Stew

It was meet the parents night. His mother made this beef stew for him and his girlfriend because it was his favourite. It was different than what her mother made, and she thought it was delicious. After they got married this beef stew was regularly on the meal plan. Fifty years later, she made it for him as a welcome home meal after a stay in the hospital. Nothing ever tasted so good!

Make this in the slow cooker so it’s ready for you after a long day. The meat will practically melt in your mouth. And the best part? You will have leftovers that taste even better!

(Mom’s) Beef Stew

A classic beef stew loaded with root vegetables and fork tender meat.

Equipment

  • 1 slow cooker

Ingredients

  • 1-2 pounds Stewing beef or boneless chuck tip or round cut into 1-inch cubes
  • 1 Medium onion diced, (1 cup)
  • 2 Medium potatoes cut in to 1/2 -inch pieces (2 cups)
  • 4 Carrots sliced ¼-inch pieces (2 cups)
  • 1 Turnip cut into ½-inch pieces (2 cups)
  • 2 Celery stalks sliced (1 cup)
  • 1 Green bell pepper diced
  • 1 tsp Salt
  • ½ tsp Pepper
  • 1 tbsp Parsley
  • 2 Bay leaves
  • Water to just cover
  • ¼ cup Barley
  • 1 tbsp Cornstarch
  • ¼ cup Cold water

Instructions

  • Place meat, vegetables and seasonings in a large slow cooker. Cover with water and stir.
  • Cover and cook in slow cooker on low for eight hours.
  • A half hour before serving, add barley. Mix cornstarch with second amount of water and stir into stew.
  • Cover with lid and continue cooking until slightly thickened and barley is tender.
  • Serve with a dinner roll or biscuit.
