Potato Salad

No family picnic is complete without potato salad. It took a few tries to get my potato salad tasting just right. I hope you enjoy this recipe as much as we do.

Potato Salad

It took a few tries to get my potato salad tasting just right. I hope you enjoy this recipe as much as we do.

Ingredients

  • 6 cups Potatoes cooked and coarsely mashed
  • 4 Eggs cooked, peeled and chopped or sliced
  • 1 Onion small, finely chopped
  • 1 Celery stalk finely chopped

Dressing

  • ½ cup Mayonnaise
  • 1-2 tbsp Dill pickle juice
  • 1 tsp Prepared mustard
  • 1 tbsp Sweet green relish
  • 1 tbsp Vinegar
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 1/8 tsp Paprika

Instructions

  • Combine first four ingredients in large bowl.
  • Combine dressing ingredients and stir into potato mixture.
  • Transfer to a clean bowl and sprinkle with paprika.
  • Refrigerate until ready to serve.

Notes

To cook potatoes 
  • Peel and slice or dice and place in large pot.
  • Add just enough water to cover and 1 tsp of salt.
  • Place a wooden spoon over top of pot and tilt lid on top. The wooden spoon will prevent the water from boiling over.
  • Bring water to a boil and then reduce to medium heat.
  • Cook until potatoes are fork tender.
  • Drain and rinse with cold water to stop the cooking process.
To cook eggs
  • Place eggs in pot and cover with cold water.
  • Add ½ tsp salt.
  • Bring to a boil.
  • Reduce heat to medium-high and continue to boil gently for 6 minutes.
  • Run under cold water for a minute or so to stop the cooking process.
  • With eggs in the pot, fill pot with cold water. Crack the eggs on the bottom of the pot to break the shell and let them sit in the water for a minute. This allows water to get between the egg and the membrane and will make it easier to peel the eggs. However, farm fresh eggs will not peel easily until they are a few weeks old.
