Blondies (Butterscotch Brownies)

Blondies made in a cast iron skillet.

Oooooh! Soooooo! Goooooood! These chewy butterscotch brownies mix up quickly and are sure to satisfy any sweet tooth.

This is another family favorite from Auntie Linda’s kitchen.

INGREDIENTS:

¼ cup                         Butter

1 cup                          Brown sugar, packed

1                                  Egg

1 tsp                           Vanilla

¾ cup                         All-purpose flour

1 tsp                           Baking powder

¼ tsp                          Salt

½ cup                         Chopped walnuts

DIRECTIONS:

  • Preheat oven to 350°F.
  • Melt butter in microwavable mixing bowl.
  • Add sugar and stir to mix well.
  • Stir in egg and vanilla.
  • Measure in remaining ingredients and stir to combine well.
  • Spread into a greased 8×8 pan.
  • Bake for 18-20 mins, until sides show signs of pulling away from the pan.

Cast Iron Skillet Directions:

Yes, you can also make these in you cast iron skillet!

  • Preheat oven to 350°F.
  • Melt butter in 8-inch cast iron skillet.
  • In a medium mixing bowl, measure in sugar.
  • Add melted butter from skillet and stir to mix well.
  • Return skillet to stove top to keep hot (but not smoking) while mixing batter.
  • Stir in egg and vanilla.
  • Measure in remaining ingredients and stir to combine well.
  • Spread into hot skillet. (The secret to prevent the blondies from sticking is to pour the batter into a hot skillet)
  • Bake in preheated oven for 18 mins, until sides show signs of pulling away from the pan.

Icing:

(Icing is not necessary, but certainly makes these blondies almost sinful!)

2 tbsp                        Butter

¼ cup                         Brown sugar, packed

2 tbsp                        Milk

1 cup                          Confectioners’ (icing) sugar

Mix to combine well. Spread evenly over mostly cooled blondies. Sprinkle with a few finely chopped walnuts.
