Whipped Shortbread

Whipped shortbread cookies topped with butter icing and sprinkles

This melt-in-your-mouth shortbread is by far the best I have ever had! The secret? Whip the cookie dough for 10-20 minutes with an electric mixer.

INGREDIENTS:

2 cups                        Butter, softened

1 cup                          Confectioners (icing or powdered) sugar

3 cups                        All-purpose flour

3/4 cup                       Cornstarch

 DIRECTIONS:

  • Using an electric mixer, cream butter in a large bowl.
  • Beat in icing sugar 1/4 cup at a time
  • Beat in flour and cornstarch 1/2 cup at a time.
  • Continue beating for 10-20 minutes.
  • Drop by teaspoonfuls or cookie press onto ungreased cookie sheet.
Dropped cookies verses pressed.
  • Add a piece of candied cherry for garnish, or you can pretty them up with some butter icing and sprinkles once cooled.

  • Bake at 300° F for 25 minutes.  You don’t want them to turn brown around the edges.

On my iPad the menu bar either along the left side of the screen, if I’m holding it widthwise (landscape) or if I’m holding it lengthwise, as a book, the menu is accessed by tapping the 3 horizontal bars in the top right hand corner.
