Italian Sausage Penne
Ready in 45 minutes, this is a perfect weekday meal. Spice it up a bit with spicy Italian sausage.

- 4 Italian sausages
- Olive oil
- 1 Onion diced
- 1 Garlic clove minced
- 1 cup Mushrooms quartered
- 1 Red bell pepper cut into large pieces
- 3 cups Your favourite seasoned tomato sauce
- ½ cup Water
- Dash Cayenne pepper optional
- 2 cups Dry penne
Sauce
Heat oil in heavy pot. I use my cast iron pot for this recipe.
Add sausages and cook while preparing vegetables.
Remove sausages and drain off excess fat.
Add vegetables to pot and allow to soften.
Slice sausages on an angle, then add back to the pot.
Add tomato sauce, water and additional seasoning, if desired.
Reduce heat and allow to simmer while pasta is cooking.
Pasta
Bring about 6 cups of water with 1 tsp of salt to a boil in large pot.
Add dry penne and stir for a minute so it doesn’t stick to the bottom.
Reduce heat to medium and continue boiling until just tender.
Drain pasta and stir into sauce.
Serve with a sprinkle of parmesan cheese and a salad on the side.
