Black Bean Salsa

Black beans are a good source of fibre and protein, making this bright and flavourful salsa not only delicious, but good for you too! Serve with tortilla chips.

Ingredients

  • 1 can Black beans rinsed
  • 1 can Whole kernel corn drained
  • 1 Small onion finely diced
  • 2 Tomatoes diced
  • 1/2 cup Jalapenos chopped
  • 1/4 cup Cilantro chopped

Dressing

  • 1/4 cup Lime juice
  • 2 Tbsp Olive oil
  • 2 Tbsp White vinegar
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • Dash Cayenne pepper optional

Instructions

  • In a colander, rinse and drain black beans and corn then place in a medium bowl.
  • Add prepared onions, tomatoes, jalapenos and cilantro to the bowl and stir.
  • In a small liquid measuring cup combine dressing ingredients and pour over vegetables. Stir.
  • Store in the refrigerator until ready to serve.
