Black Bean Salsa
Black beans are a good source of fibre and protein, making this bright and flavourful salsa not only delicious, but good for you too! Serve with tortilla chips.

- 1 can Black beans rinsed
- 1 can Whole kernel corn drained
- 1 Small onion finely diced
- 2 Tomatoes diced
- 1/2 cup Jalapenos chopped
- 1/4 cup Cilantro chopped
Dressing
- 1/4 cup Lime juice
- 2 Tbsp Olive oil
- 2 Tbsp White vinegar
- 1/2 tsp Cumin
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- Dash Cayenne pepper optional
In a colander, rinse and drain black beans and corn then place in a medium bowl.
Add prepared onions, tomatoes, jalapenos and cilantro to the bowl and stir.
In a small liquid measuring cup combine dressing ingredients and pour over vegetables. Stir.
Store in the refrigerator until ready to serve.
