Sweet Chilli Chicken Salad

Sweet chilli chicken salad is so good your family won’t realize they are having salad for supper. The crispy chicken, the soft noodles, the crunchy veggies and a little sweet with heat give this salad variety in every bite.

I have also made this with boneless chicken wings. When my husband says he wants wings for supper, I steal a few and make this for me. : )

Sweet Chilli Chicken Salad

This salad is so good your family won’t realize they are having salad for supper. The crispy chicken, the soft noodles, the crunchy veggies and a little sweet with heat give this salad variety in every bite.

Ingredients

  • 8 Chicken strips*
  • 1 bag Mixed salad greens
  • 1 Red onion cut into thin strips
  • 1 Carrot shredded
  • 1 Bell pepper thinly sliced
  • 1/4 cup White wine vinegar
  • 2 bundles Vermicelli noodle
  • 1 cup Sweet chilli sauce
  • 1/2 cup Peanuts (optional) chopped

Instructions

  • Cook chicken strips and vermicelli following package instructions.
  • Meanwhile, prepare vegetables and place in a large bowl.
  • Toss vegetables with white wine vinegar and place equal portions on individual plates.
  • When vermicelli is cooked, drain and toss with half the sweet chilli sauce. Place noodles on top of salad.
  • Cut cooked chicken strips across the grain into ½-inch slices. Place in a bowl and gently toss with remaining sweet chilli sauce, then place on top of noodles.
  • Top with a sprinkle of peanuts, if desired.

Notes

When choosing chicken strips, I look for white chicken breast as opposed to minced chicken. You can also simply use cooked chicken cut into bite-sized pieces.
