(Nanny’s) Mayonnaise

The end of April marks the beginning of lobster season on Prince Edward Island. Setting Day is a ceremonious event. Many Islanders wake up early to see the lobster fishers off for their first sail to set the traps. Parades of lobster boats head out from north shore wharfs; the wakes reflect the golds and pinks from the morning sky. A low hum echoes over the fields. Something I will hear from my bed each morning for the next several weeks.

On Mother’s Day, fresh lobster finds its way to the dinner table as families gather for a “feed of lobsters” with homemade mayonnaise and potato salad.

Nanny’s mayonnaise is delicious on any sandwich, but lobster sandwiches wouldn’t be the same without it. The sweet and tangy condiment is a family tradition.

(Nanny’s) Mayonnaise

Lobster sandwiches wouldn’t be the same without this homemade mayonnaise, Nanny-style. The sweet and tangy condiment is a family tradition. Makes about 2 ½ cups.

Ingredients

  • 1 Egg
  • ¾ cup Granulated sugar
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 2 tsp Dry mustard sifted
  • 4 tbsp All-purpose flour sifted
  • 1-2 tbsp Prepared mustard to taste
  • ½ cup Vinegar
  • 1 ½ cup Milk

Instructions

  • In a medium heavy saucepan, lightly beat egg with a whisk. Add mustard and vinegar.
  • In a small bowl, combine dry ingredients and add to the saucepan. Whisk until there are no lumps.
  • Slowly stir in milk. Cook over medium heat until thickened to desired consistency, stirring constantly. Do not boil. A flat-bottomed wooden spoon helps prevent the mixture from sticking to the bottom of the pan.
