(Nanny's) Mayonnaise
Lobster sandwiches wouldn’t be the same without this homemade mayonnaise, Nanny-style. The sweet and tangy condiment is a family tradition. Makes about 2 ½ cups.

- 1 Egg
- ¾ cup Granulated sugar
- ½ tsp Salt
- ¼ tsp Pepper
- 2 tsp Dry mustard sifted
- 4 tbsp All-purpose flour sifted
- 1-2 tbsp Prepared mustard to taste
- ½ cup Vinegar
- 1 ½ cup Milk
In a medium heavy saucepan, lightly beat egg with a whisk. Add mustard and vinegar.
In a small bowl, combine dry ingredients and add to the saucepan. Whisk until there are no lumps.
Slowly stir in milk. Cook over medium heat until thickened to desired consistency, stirring constantly. Do not boil. A flat-bottomed wooden spoon helps prevent the mixture from sticking to the bottom of the pan.
