For tender, juicy pork chops, sprinkle with salt a few hours before cooking. Then cover and store in the refrigerator until ready to prepare.
Heat oil in a skillet over medium-high heat.
Sear pork chops on both sides, about 2-3 minutes each side or until they release from the pan. If they do not lift from the pan easily, they are not ready to turn. Allow them to sear a little longer.
When both sides are seared, transfer from the skillet to a plate.
Add prepared onion, red pepper and garlic to the skillet and sauté until tender.
Return meat to the skillet.
Combine milk, sour cream and seasonings in a two-cup measure and pour over meat.
Reduce heat to low and cover.
Continue cooking while you prepare the rest of the meal.
Remove lid and allow sauce to reduce until thickened, if necessary.
