Chinese Vegetables and Chicken in Sweet and Sour Sauce
With a bag of frozen Chinese vegetables and cooked chicken on hand, this weekday meal is ready in a snap! Serve over rice.

- 2 tbsp Ketchup
- 1 cup Water
- 1/2 cup White vinegar
- 1 tbsp Soy sauce
- 3/4 cup Brown sugar
- 2 tbsp Cornstarch
- 2 tbsp Cold water
- 1 cup Pineapple tidbits canned
- 1/2 Large green pepper diced
- 3-4 cups Chicken cooked and diced
- 1 bag Chinese vegetables frozen
Preheat oven to 350°F.
In a medium, oven-proof Dutch oven, stir ketchup, water, vinegar, soy sauce and sugar together, and warm over medium heat.
In a small bowl, stir cornstarch and cold water together. Add to Dutch oven and continue heating until mixture thickens.
Stir in remaining ingredients.
Cover and cook in oven for 45-60 minutes, or until vegetables are tender.
Serve over rice.
