Bruschetta
Who doesn’t enjoy bruschetta? This recipe comes together quickly. The topping can be prepared 2-3 days ahead.Makes about 25 slices.

- 2 cups Tomatoes seeded and diced
- 2 cloves Garlic minced or ½ tsp garlic powder
- 1/3 cup Olive oil
- 1 tsp Italian seasoning
- 1 tsp Dried basil
- ½ tsp Salt
- ¼ tsp Ground pepper
- ½ cup Mozzarella cheese grated
- 1 Baguette
Combine first seven ingredients in a bowl. Cover and let stand for at least one hour so flavours blend.
Cut baguette on the angle into ¾ inch slices and place on a cookie sheet.
Stir ½ of mozzarella into the tomato mixture and spoon onto baguette slices.
Sprinkle remaining mozzarella on top.
Place under broiler until cheese is melted and bread edges are toasted.
Serve immediately.
