Ingredients
1cupButtermilk*
1cupBran
1cupAll-purpose flour
1tspBaking powder
1tspBaking soda
½tspSalt
1cupBlueberriesfresh or frozen
1/3cupCooking oil
3tbspFancy molasses
1Egg
¼cupBrown sugarpacked
½tspVanilla
Instructions
Preheat oven to 375°F.
Prepare muffin pan (grease or line cups).
In a small mixing bowl, stir buttermilk and bran together. Let stand 5 minutes.
Meanwhile, combine flour, baking powder, baking soda and salt in a large mixing bowl. Stir in blueberries. Make a well in the center.
Beat remaining ingredients together.
Add the bran mixture and stir.
Pour mixture into well of dry ingredients and stir just to moisten.
Fill muffin cups ¾ full.
Bake at 375°F for 20-25 minutes.
Let stand for 5 minutes before removing from pan to cool completely.
Notes
* To make buttermilk, put 1 tbsp of vinegar or lemon juice in a 1-cup liquid measure then add milk to measure a total of 1 cup. Stir and let sit for a few minutes.
