BBQ Pulled Pork Sandwiches

This recipe has just enough tang and smoky flavour. A tasty way to use up leftovers from your pork roast dinner. Serve on a toasted bun with a side of creamy coleslaw.

Ingredients

  • 2 tbsp Olive oil
  • 1 Medium onion sliced and separated into rings
  • 1/2 Bell pepper diced
  • 3 - 4 cups Pork roast or tenderloin cooked and broken into pieces
  • 1 1/2 cups Tomato sauce 398 mL can
  • 1/2 cup Brown sugar
  • 1/3 cup Vinegar
  • 1 tbsp Prepared yellow mustard
  • 1/2 - 1 cup Favourite BBQ sauce

Instructions

To cook the pork roast or tenderloin in the oven

  • Preheat oven to 325°F.
  • Place pork in a baking pan.
  • Sprinkle with salt and pepper.
  • Add one cup of water.
  • Cover and let cook for 2-3 hours until done. Watch liquid level so it doesn’t cook dry.

To cook pulled pork in the oven

  • Heat olive oil in cast iron Dutch oven.
  • Add onion rings and bell pepper. Allow to sweat.
  • Add pork roast, broken into pieces.
  • Combine remaining ingredients and pour over pork roast.
  • Cover and cook slowly at 300°F for 3-4 hours until sauce is nicely reduced.
  • An hour before serving, pull pieces of pork apart using two forks and continue cooking until ready to serve.

To cook in the slow cooker

  • Place pork in a slow cooker.
  • Sprinkle with salt and pepper.
  • A one cup of water
  • Cook on high for four hours.
  • Remove the cooked pork and cut into pieces. Discard any liquid.
  • Put prepared onion and bell pepper in the bottom of the slow cooker.
  • Add cooked pieces of pork roast.
  • Mix sauce and pour overall.
  • Cook on low for four hours.
  • An hour before serving, pull pieces of pork apart using two forks and continue cooking until ready to serve.
